Death taxes

In some countries you need to pay tax on your estate when you die. If you have your property in a trust you may defer the tax or avoid paying tax. How do we do that in a sovereign way. I am not sure if trusts are helpful to remain sovereign or not. How do you write a will so that my son and daughter can benefit from all my property value without having to pay tax.
