How does a man/woman deal in the moment with actual violence by police who are placing handcuffs on a man/woman for not wearing a mask or showing proof of vaccination?

whip out your cellphone or recording device and start recording and stating your name and get the name of the police officer committing the harm/ force against said man or woman;
as this will be used as evidence for claim against the man/woman who is acting as a police officer for trespass by way of harm/ force
What about when a wo\man does not carry on him/her a cellphone and there is no one around to ask to record the trespass?? What kind of evidence is there to present on the notice? Wouldn’t be complaining instead of claiming by way of evidence??
