I’m setting up an online business and I have to agree to the Terms and Conditions of use of Square or Stripe….They refer to me as a ‘person’ (“you are a person, 18 years of age or older”). Can this be used against me if I do not intend to pay taxes anymore?

They can call you a slave, it doesn’t matter. If your business is registered with the state you are liable for taxes. If you are a private entity, 508c1a, etc then you don’t need to worry about it.
